Veggie quiche with Lentil crust "vegan"
We have adopted this recipe at home because it’s Delicious, healthy, easy to make and Giulia 👶 loves it!!! Try this #homemade quiche for the whole family and let me know how did it go ☺️
FOR THE CRUST
2 cups lentils or quinoa “ cooked”
3 tbsp coconut oil
1/3 flaxseed powder
1/3 warm water
1/4 nutritional yeast
1/4 tsp salt
FOR THE FILLING
1 tbsp of olive or coconut oil
Vegetables of your preference, and most importantly, veggies that you have in your fridge ;) I used onions, zucchini, broccoli, carrots, and kale.
Mix the flaxseed and warm water in a small bowl and set aside, preheat the over to 400*. Get the veggies in a pan, one at a time, and let it cook for a few minutes. Meanwhile, mix all the ingredients from the crust in a bowl, place it on the pie pan “like in the video” and onto the oven for 15 minutes or until the filling is ready.
Once vegetables are cooked, add the kale and let on medium to high heat for another 5 minutes until all the excess water is gone from the pan. “ you can use the blender to make a smoother texture” I prefer with some pieces.
Final phase: transfer the filling with a spatula or spoon into the prepared pie crust and bake it for another 15 to 20 minutes!!! Ready to enjoy for lunch or dinner
